Laura’s Chicken and Bacon Low Carb Fettuccine
Ingredients-
1 packet Great Low Carb Co Fettuccine
1 small white onion, chopped
2 garlic cloves, crushed
7 rashers of bacon
2 chicken breasts, sliced
2 TBSP Butter
1 cup Cream
½ + ¼ C grated Parmesan Cheese
Salt + Pepper
Optional- Spinach leaves or chopped cherry tomatoes
Method-
- Boil fettuccine for 8-10 mins as directed on packet until El dente
- In a fry pan on a medium temperature add bacon, onion and garlic fry until transparent
- Add Chopped bacon and fry until cooked remove from pan
- Add chicken to pan and cook through
- Add bacon and onion mix back in and add cream and 1/2 C parmesan allow to simmer and thicken for 5 or so minutes- add spinach here is using in you pasta
- Drain water from pasta and add pasta to the pan, toss and coat in the sauce
- Put into an oven proof dish and top with remaining parmesan cheese
- OPTIONAL- you can grill for 5 mins but not necessary
- Serve with freshly cracked pepper
