Low-Carb Sticky Caramel Pudding

This Low-Carb Sticky Caramel Pudding is soft, buttery and seriously comforting, with a warm almond-flour sponge soaked in rich allulose caramel sauce. It has all the cosy dessert vibes of the classic, with far less sugar.

Pudding

  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • ⅓ cup allulose
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • 3 large eggs
  • 80g butter, melted
  • ½ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 2 tbsp sugar-free maple-style syrup, optional
  • ¼ cup finely chopped pecans or walnuts, optional

Sticky Caramel Sauce

  • 80g butter
  • ½ cup allulose
  • ¾ cup cream
  • 1 tsp vanilla extract
  • ¼ tsp sea salt

Directions

1. Make the pudding

Preheat the oven to 170°C fan bake.

Grease and line a 20cm square baking dish.

In a large bowl, combine the almond flour, coconut flour, allulose, baking powder, baking soda and salt.

In a separate bowl, whisk together the eggs, melted butter, almond milk, vanilla and maple-style syrup if using.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Fold through the chopped nuts if using.

Spread the batter evenly into the prepared dish.

Bake for 25–30 minutes, or until golden on top and a skewer inserted into the centre comes out clean.

2. Make the caramel sauce

While the pudding is baking, add the butter and allulose to a saucepan over low-medium heat.

Cook gently, stirring, until the butter has melted and the allulose has dissolved.

Slowly pour in the cream while stirring.

Bring to a gentle simmer and cook for around 8–10 minutes, stirring regularly.

The sauce should thicken slightly and become a light caramel colour.

Remove from the heat and stir through the vanilla and sea salt.

3. Make it sticky

Once the pudding comes out of the oven, poke holes all over the top with a skewer.

Pour around ⅓ of the warm caramel sauce over the pudding.

Let it sit for 5–10 minutes so the sauce soaks into the sponge.

4. Serve

Cut into squares and serve warm with extra caramel sauce poured over the top.

You could also add:

  • whipped cream
  • sugar-free vanilla ice cream
  • Greek yoghurt
  • chopped pecans
  • a tiny sprinkle of flaky sea salt
