🍪 Keto Shortbread Cookies

Servings: About 20-24 cookies (depending on size)
Prep Time: 15 minutes (plus chilling)
Cook Time: 10-12 minutes

Ingredients:

  • 1 cup (120g) Almond Flour (finely ground, not almond meal)
  • 1/4 cup (28g) Coconut Flour
  • 1/2 cup (115g) Unsalted Butter, softened
  • 1/2 cup (100g) Powdered Erythritol or Allulose (Allulose is best for a smoother texture)
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt

Instructions:

  1. Mix Dry Ingredients:
    In a medium bowl, whisk together almond flour, coconut flour, and salt.

  2. Cream Butter & Sweetener:
    In a large mixing bowl, beat the softened butter and powdered erythritol (or allulose) until light and fluffy (about 2-3 minutes).

  3. Add Vanilla & Dry Ingredients:
    Add vanilla extract and gradually mix in the flour mixture until a soft, smooth dough forms.

  4. Chill Dough:
    Form the dough into a ball, wrap it in plastic wrap, and chill in the fridge for at least 30 minutes. This helps the dough firm up, making it easier to roll and cut.

  5. Preheat Oven:
    Preheat your oven to 160°C (325°F) and line a baking tray with parchment paper.

  6. Roll & Cut:
    Place the chilled dough between two sheets of parchment paper and roll it out to about 1/4 inch (0.6 cm) thick.
    Use your cookie cutters to cut out shapes and gently transfer them to the baking tray.

  7. Bake:
    Bake for 10-12 minutes, or until the edges are just starting to turn golden. Keep a close eye on them as they can brown quickly.

  8. Cool Completely:
    Let the cookies cool on the baking tray for about 10 minutes, then transfer to a wire rack to cool completely. They will firm up as they cool.

  9. Store:
    Store in an airtight container at room temperature for up to 1 week or in the fridge for 2 weeks. They also freeze well!
