Cashew Caramel Slice
This raw slice is a real crowd pleaser but note it is a high fat treat!

Base
200g Almond flour/ Ground Almonds
1/4Cup Powdered Sweetener
1/4 Cup desiccated coconut
50g Melted butter
40g Hot water
Caramel layer
1/4C Melted Butter
1/2C melted coconut oil
200g Cashew butter
1/4Cup powdered sweetener (I use Nothing Naughty)
3TBSP sugar free maple syrup
Chocolate Layer
1x 100g Vitawerx White chocolate
1 tsp coconut oil
Method-
Base
Combine all dry ingredients and add wet ingredients. Mix until a dough forms and press into a lined brownie tin. Place in the fridge while you make the caramel
Caramel
In a high-speed blender such as a Thermomix, Vitamix or ninja place all ingredients in until and mix/ combine until smooth. Taste test ass more maple if it needs a more caramel flavour
Pour onto the base and place in fridge for 30 mins
Choc Layer
Break up your chocolate bar and pop into a microwave safe container.
Add tsp coconut oil
Melt in 30 second bursts until fully melted
Pour over caramel layer and set in fridge for 2 hours before cutting
