This was a wee play around that worked really well and had all the winter apple pie feels- if you make this or any variation please show me!
Mock apple pie filling
1x Choko/chayote squash cut into small pieces- you could also use Zucchini if you cannot locate Choko
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp apple essence
1/4C allulose
1/4C natvialiving brown sweetener
Pinch salt
Pie crust
1x fibreboost apple crumble flavour bar
Crumble
20g cold butter
1 TBSP almond flour
2 TBSP desiccated coconut
2 TBSP sweetener of choice
Mock apple filling-
Add cubed choko to boiling water and simmer until soft
Drain water and add other ingredients and allow to simmer another few mins- taste and adjust sweetener/ spices to your own taste. If the liquid is too runny add a small pinch of xanthan gum
While to filling is cooking microwave the bar for 20 seconds and pop between baking paper and roll out. Press into a small pie case
Pop in the air fryer or oven at 180 for 7-10 mins (keep an eye on it)
Crumble
Mix all dry ingredients together and rub in with cold butter
Assembly
1. Wait until the crust has completely cooked before removing from the tin
2. Fill crust with mock apply filling
3. Add crumble topping
4. Air fry for 5-7 mins or until crumble is golden
5. Too with cream or ice cream and caramel sauce ⭐️
