This delectable 5-Ingredient Chocolate Mascarpone Mousse is the dessert I can’t stop making. It’s a show stopping dessert to wow your guests. It's a favourite among my kids and they ask for it most weeks. You can leave off the berry coulis buy personally I love the contrasting flavours.
- 1 cup chocolate chips
- 200g mascarpone cheese
- 1/2 cup whipped cream
- 1 tsp. vanilla essence
- Pinch of sea salt
- OPTIONAL- 1 tsp coffee granuales (add in with melted chocolate chips)
- OPTIONAL- If you are using bitter chocolate you may want to add a few tablespoons of sweetener, I do not though
Method-

Melt chocolate chips in microwave. It takes about 1-2 mins, or on a double boilrer

Keep on stirring chocolate on regular intervals. Cool melted chocolate at room temperature.

Whip cream to medium soft peaks. Refrigerate till further use.

In a mixing bowl, add mascarpone and vanilla essence. Add melted chocolate and mix it thoroughly. Do not whip at high speed.

Fold in cheese and chocolate mixture with whipped cream using light hands using a silicone spatula.

Serve in shot glasses/ small jars, topped with berry coulis and a little whipped cream and grated chocolate

Refrigerate till the time of serving.
5 minute berry couli
Pop whatever frozen berries you have into a small saucepan with 1 tbsp allulose and a tsp lemon juice
allow to defrost and thicken (takes about 10-15 mins (depending on what berries you are using)
Store in fridge and top on mousse when ready to serve
