Ingredients
Base
1 C Almond Flour
2 large tablespoons melted butter
1/4C Cocoa Powder
1 egg
1 scoop BYS Natural Collagen Powder
1 tablespoon Natvia or sweetener of choice
Filling
500g softened cream cheese
1/2C Natvia or sweetener of choice
3 eggs
1 or 2 sachets of Before You Speak OG Coffee- depending how strong you like it (You could also sub this for any Before You Speak coffee flavour)
Method-
- Preheat oven to 130 degrees
- Mix all base ingredients together, press into the base of a lined cheesecake tin and then place in the freezer to firm while making the filling
- For the filling
- Place softened cream cheese and Natvia in a bowl and mix with an electric mixer
- Add in 1 egg at a time while mixing
- Add coffee sachets and mix well
- Take base out of freezer and pour filling on top of the base, tap it on the bench to remove bubbles
- Place cheesecake on a tray and into the oven for 1 hour. Turn off oven and leave cheesecake in the oven for another hour.
- Remove from oven and leave on bench to cook completely
- Refrigerate overnight to set and chill before removing it from the tin.
- Top with shaved keto friendly chocolate if you wish
