Keto lemon and honey chicken! This was incredible!
2 chicken breast
Salt and pepper
Coconut oil
1/8 C coconut aminos or soy sauce
2 Tbsp minced garlic
1 Tbsp minced ginger
1/4 C keto liquid sweetener (I used Natures.Hollow honey but you could use
Rind of 1/2 lemon
Juice of approx 1/4 lemon
1/4 C water
1/4 tsp xanthan gum
Cut chicken into bite size pieces and season with s&p.
Heat oil in a wok and add chicken, cook until crispy and golden.
Combine all sauce ingredients (excluding xanthan gum) and add to wok, coat chicken.
Sprinkle xanthan gum over sauce and allow to thicken for 3-5 mins.
Serve with a low carb friendly rice and top with lemon, chives and sesame seeds.
Low Carb Rice can be found here or use cauliflower rice.
Note- you can add 1/4 tsp red pepper flakes for a little kick if you want
