3 Large chicken breasts
- 240 mL Chicken stock

240 mL cream
-
100 gm Parmesan cheese

½ cup Sundried tomatoes

Large Handful Spinach

1 Onion

3 Garlic cloves
Directions
- Heat olive oil in a pan on medium high heat & brown the chicken for 4-5 mins on each side or until cooked through. Transfer onto a place and set aside.

Saute the onion & garlic until fragrant then add chicken stock, sundried tomatoes, cream & Mingle's Tuscan Chicken Seasoning. Stir until combined & allow to simmer for 2-3 mins.
- Lastly, add parmesan cheese and spinach. Cover to allow cheese to melt and spinach to wilt then place chicken breasts back in the sauce & let simmer for a few more minutes.
- Serve on top of low carb pasta or rice.
