Ingredients

2 Large Chicken breasts
- 100 ml Coconut milk
- 1 Packet Qetoe Noodles

1 Cucumber (diced)

1 Carrot (cut into strips)
- 250 g Red cabbage

1 Red chilli (finely diced)

Peanuts (crushed)

Coriander (to serve)
Satay Dressing
-
2/3 Cup Coconut milk
-
2-3 Tbsp Peanut butter
-
1/2 Lime
-
Water to thin
Directions
- In a large bowl, mix 1/2 sachet of Mingle's Satay Seasoning with coconut milk until combined.
- Add diced chicken breast & coat.
- Pan fry chicken until cooked & allow to cool. Once cooked, two forks and shred.
- Cook noodles as per packet instructions.
- Assemble bowl by adding your noodles, chopped veggies, crushed peanuts and coriander.
- Take make your dressing: mix together other 1/2 of satay seasoning sachet, peanut butter, coconut milk, lime & water to thin.
- Drizzle over the salad & enjoy :)
