Sugar Free 3 Ingredient Blueberry Jam

Keto Blueberry Jam Recipe | Low Carb Haven

There are some things that I didn't eat a lot of before I started keto but once the option was taken away I really missed it and jam was one of them! It’s a perfect sweet treat on keto bread or on my Sunday sweet-scones , also perfect paired with coconut yoghurt and nutola.

 

Ingredients

 Method

  1. Place the blueberries in the pan and let them simmer away for about 5 minutes until the juices start to come out
  2. Add lemon juice and sweetener, stir, then adjust the lemon or sweetener according to your taste
  3. Let the berries simmer away on a medium heat for 20-30 minutes while the juices start to evaporate
  4. At this point you can choose to add a few teaspoons of chia seeds or 1/2 teaspoon of xanthum gum but I prefer to just have patience and let the berries go almost as far as catching on the bottom of the pan and then I know they are ready
  5. Allow the jam to cool before putting it in your jar. I do suggest sterilising a glass jar as this will make the jam last up to 3 months in your fridge
