There are some things that I didn't eat a lot of before I started keto but once the option was taken away I really missed it and jam was one of them! It’s a perfect sweet treat on keto bread or on my Sunday sweet-scones , also perfect paired with coconut yoghurt and nutola.
Ingredients
- 3 cups frozen blueberries
- 1T Fresh lemon Juice
- 3T SweetNZ Not icing sugar
Method
- Place the blueberries in the pan and let them simmer away for about 5 minutes until the juices start to come out
- Add lemon juice and sweetener, stir, then adjust the lemon or sweetener according to your taste
- Let the berries simmer away on a medium heat for 20-30 minutes while the juices start to evaporate
- At this point you can choose to add a few teaspoons of chia seeds or 1/2 teaspoon of xanthum gum but I prefer to just have patience and let the berries go almost as far as catching on the bottom of the pan and then I know they are ready
- Allow the jam to cool before putting it in your jar. I do suggest sterilising a glass jar as this will make the jam last up to 3 months in your fridge
